Copy Cat Chipotle Burrito Bowl

Ok, I totally took the wrong picture for this making it super difficult to blog. The good news: using the search bar you can find either of the recipes included in this post so it doesn't really matter. Husband is a HUGE Chipotle fan so he was on board for making it ourselves. I kept looking forward to this recipe and man did it deliver. Husband says they rival the burrito bowls of Chipotle but majorly prefers our pork carnitas to any of their meat choices. Take that Chipotle. We made the Pork Carnitas the day before on our regular crock pot day and since it always makes enough to feed a small army we planned these with the left overs. We used the rice cooker to make the rice since we are lazy and made the beans while it cooked. then we just layered, added some queso fresco and ate it with a few chips. Yum. Most definitely 5 out of 5 stars!!

Chipotle's Cilantro Lime Rice

Serves: 4

Ingredients

  • 1 cup extra long grain rice or basmati rice
  • 1/2 lime, juice of
  • 2 cups water
  • 1 tsp salt
  • 3 tbsp fresh chopped cilantro
  • 3 tsp vegetable oil

Directions

  1. In a small heavy pot, add rice, water, 1 tsp oil and salt. Boil on high until most of the water evaporates. When the water just skims the top of the rice, reduce to low and cover about 15 minutes. Shut off flame and keep covered an additional 5 minute.
  2. In a medium bowl, combine chopped cilantro, lime juice, rice and remaining oil and toss until completely mixed.

Quick and Delicioso Cuban Style Black Beans

Serves: 4

Ingredients

  • 2 tsp olive oil
  • 1/2 onion
  • 2 cloves garlic
  • 2 scallions
  • 2 tbsp red bell pepper
  • 3 tbsp cilantro
  • 15 oz can black bean, do not drain
  • 1/2 cup water or more if needed
  • 1 bay leaf
  • few pinches cumin to taste
  • pinch oregano
  • 1 tsp red wine vinegar
  • salt and black pepper to taste

Directions

  1. Chop onion, garlic, scallions, red pepper, and cilantro in a mini chopper of food processor.
  2. Add oil to a medium-sized pot on medium heat. Add vegetables to the pot and saute until soft, about 3 minutes. Add beans, water, bay leaf, cumin, oregano, red wine vinegar, salt and black pepper and bring to a boil. Lower heat and cover, simmer about 15 minutes stirring occasionally (adjust water as needed). Taste for salt and serve.

Balsamic Beef Roast with Polenta

This is a two part recipe that needs to be done as one post so forgive my format issues. With Husband back to school and late church we are now looking at three possible slow cooker nights a week. I had no choice but to buy the magazine I saw called "Skinny Slow Cooker". This was our first recipe from the magazine and I have to say I am now so excited to try the others! The beef was perfect once you poured the juice over it and the polenta was a good "mashed potato" type side. The beef definitely out shined the polenta big time though. I was nervous about this recipe for some reason but it was a yummy, easy dinner with lots of leftovers. Thing 1, my one year old, devoured it and couldn't stop using the sign for "more" which we have been trying to teach him forever. I give the beef 4 stars and the polenta 3 stars out of 5.

Serves: 6

Ingredients

  • 1 2 to 2 1/2 lb boneless beef chuck pot roast
  • 1 (16 ounce) package frozen small whole onions
  • 14 teaspoon salt
  • 14 teaspoon ground black pepper
  • 1 cup lower sodium beef broth
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons tomato paste
  • 2 tablespoons quick-cooking tapioca
  • 3 cloves garlic minced
  • 1 teaspoon dried italian seasoning crushed
  • 1 recipe Soft Polenta
  • fresh italian flat leaf parsley snipped
  • Parmesan cheese shaved

Directions

  1. 1. Trim fat from meat. If necessary, cut meat to fit into a 3 1/2 or 4 quart slow cooker. Place frozen onions in cooker. Place meat on top of onions. Sprinkle meat with salt and pepper. In a small bowl combine the broth, vinegar, tomato paste, tapioca, garlic, and italian seasoning. Pour mixture over meat.
  2. 2. Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours.
  3. 3.Transfer meat to a serving platter. Skim off fat from cooking liquid. Serve meat with soft polenta and cooking liquid. Sprinkle with parsley. If desired, garnish with cheese.

Soft Polenta

Ingredients

  • 3 34 cups water divided
  • 1 cup yellow cornmeal
  • 12 teaspoon salt

Directions

  1. In a medium saucepan bring 2 3/4 cups water to boiling. Meanwhile, in a medium bowl stir together 1 cup yellow cornmeal, 1 cup cold water, and 1/2 teaspoon salt. Slowly add cornmeal mixture to boiling water, stirring constantly. Cook and stir until mixture returns to boiling. Reduce heat to medium-low. Cook for 10 to 15 minutes or until mixture is very thick and tender, stirring frequently and adjusting heat as needed to maintain a slow boil.
  2. To be served with Balsamic Beef Roast with Polenta

No-Knead Overnight Parmesan and Thyme Rolls

 

This was my latest attempt at bread making and it was fun! Anything that involves bread and cheese is good by me. Thing 1 helped me make these and was very interested in the process which was fun. There are a lot of strong flavors especially the thyme so make sure you like thyme before you make this recipe. I liked this a lot the night I first had it but it was even better the next day when I put it in the microwave for 30 seconds and paired it with our yummy potato soup leftovers. That made it a 5 out of 5 stars.

Ingredients

  • 12 teaspoon dry yeast
  • 2 tablespoons warm water (100° to 110°)
  • 2 tablespoons extra-virgin olive oil divided
  • 1 teaspoon dried thyme
  • 13 cup 2% reduced-fat milk
  • 12 cup (2 ounces) grated Parmigiano-Reggiano cheese divided
  • 1 tablespoon sugar
  • 12 teaspoon kosher salt
  • 1 large egg lightly beaten
  • 1 110 ounces whole-wheat white flour (about 1/4 cup)
  • 5 35 ounces all-purpose flour (about 1 1/4 cups) divided
  • Cooking spray
  • 12 teaspoon cracked black pepper

Directions

  1. Dissolve yeast in 2 tablespoons warm water in a large bowl; let stand 5 minutes or until bubbly.
  2. Heat 1 tablespoon oil in a small saucepan over medium heat. Add thyme to pan; cook 1 minute or until bubbly and fragrant. Add thyme mixture and milk to yeast mixture, stirring with a whisk; add 1/4 cup cheese, sugar, salt, and egg, stirring well.
  3. Weigh or lightly spoon whole-wheat white flour into a dry measuring cup; level with a knife. Using a wooden spoon, stir whole-wheat white flour into yeast mixture. Weigh or lightly spoon 4.5 ounces (about 1 cup) all-purpose flour into a dry measuring cup; level with a knife. Add all-purpose flour to yeast mixture, stirring well. Add enough of remaining all-purpose flour, 1 tablespoon at a time, to form a smooth but very sticky dough. Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and refrigerate overnight. (Dough will not double in size.)
  4. Remove dough from refrigerator. Do not punch dough down. Turn dough out onto a floured surface; sprinkle dough lightly with flour. Roll dough into a 12 x 7–inch rectangle. Brush dough with remaining 1 tablespoon oil. Sprinkle remaining 1/4 cup cheese evenly over dough; sprinkle with pepper. Beginning with a long side, roll up dough jelly-roll fashion. Pinch seam to seal (do not seal ends of roll). Cut roll into 8 (1 1/2-inch) slices. Place slices, cut sides up, on a baking sheet covered with parchment paper. Cover and let rise in a warm place (85°), free from drafts, 1 hour or until rolls have risen slightly.
  5. Preheat oven to 400°.
  6. Place pan in oven, and immediately reduce heat to 375°. Bake rolls at 375° for 12 minutes or until golden brown. Serve warm.

Mixed Greens with Berries & Honey-Glazed Hazelnuts

We did this salad a few nights ago and it turned out pretty good. We didn't have the greens so we used romaine lettuce which I don't really recommend. I think the greens would have taken it up a notch. Also this batch of blackberries was a little tart so the flavor was overpowering. I didn't use all of the dressing and I should have. It just looked overdressed but I was deceived. The best part of this salad was the honey glazed walnuts. So yummy. We gave it a 4 out of 5 stars but next time I will try the right greens and use raspberries.

 


Serves: 4

Ingredients

  • 1 teaspoon extra-virgin olive oil
  • 1 teaspoon honey
  • 14 cup chopped hazelnuts or walnuts
  • 13 cup raspberries blackberries and/or blueberries
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon water
  • 1 teaspoon Dijon mustard
  • 1 small clove garlic crushed and peeled
  • 12 teaspoon honey
  • 18 teaspoon salt or to taste
  • Freshly ground pepper to taste
  • 2 tablespoons finely chopped shallots
  • 10 cups mixed salad greens (about 8 ounces)
  • 1 cup blackberries raspberries and/or blueberries
  • 12 cup crumbled feta or goat cheese (4 ounces)

Directions

  1. To prepare nuts: Preheat oven to 350°F. Coat a small baking dish with cooking spray. Combine oil and honey in a small bowl. Add nuts and toss to coat. Transfer to the prepared baking dish and bake, stirring from time to time, until golden, 10 to 14 minutes. Let cool completely.
  2. To prepare dressing: Combine berries, oil, vinegar, water, mustard, garlic, honey, salt and pepper in a blender or food processor. Blend until smooth. Transfer to a small bowl and stir in shallots.
  3. To prepare salad: Just before serving, place greens in a large bowl. Drizzle the dressing over the greens and toss to coat. Divide the salad among 4 plates. Scatter berries, cheese and the glazed nuts over each salad; serve immediately.

Oven Roasted Veggies

Tonight was the 3rd contest recipe so far. We had a BBQ so these roasted veggies went well. They are simple but simple in a good way. I used sea salt and I added the optional mushrooms which in my opinion should not be optional since they were our favorite part. It was my first time using yellow squash so that was a plus. I love using new veggies! Another one we will make again and again. 4 out of 5 stars!

(You can use just about any vegetables.)


1 med Red Onion, sliced
1 med Green Bell Pepper, sliced
1 med Zucchini, sliced into disks
1 med Yellow Squash, sliced into disks


Sometimes I add Mushrooms.


Layer the veggies in a baking dish. Sprinkle with salt and pepper, then drizzle with Olive Oil. Toss, then bake at 350 for 30 minutes.
